My guess is the wood is green, it would need a lot of moisture to stay in one piece as in the video. Very impressive.

Usually, the wood is Japanese white cedar, well seasoned.
The blades are hand sharpened for competition to 50,000 grit. Mr. Isao Inomoto has been making Japanese planes for more than 50 years. In my new DVD to be released in the spring, he demonstrates the process step by step, along with illustrated instructions so you can actually build your own kanna. I'll try to post some clips shortly.

Here is Mr. Inomoto teaching a dai making class a few years ago (the dai is the wooden part of the plane).
