"Jesu, Joy of Man's Desiring", which for some reason is always confused with Pachebel's "Canon in D". Preferably performed in Celtic fashion (that's Celtic as in pronounced with a 'k', not an 's' like the basketball team). There is a great "Solitudes" version on "A Celtic Christmas Story" that includes Canada geese.

I've also always liked "The Huron Carol".

There is this Christmas song that is mainly orchestral, although I have heard versions that have choirs singing. But I can't think of the name. It goes "DA da DA da, DA da DA da". YOU know? It was in the movie Home Alone when little Mcauley goes into a church and the choir is singing it. Anyone know it??? I really want to know.
