How do you plan on using it?
For 'edible' blood, my favorite recipe is Karo light corn syrup, with red food coloring (and a little bit of blue). I know some people also add a little condensed milk to the mix to give it a bit more opaque quality. Of course, you still have to be careful with this stuff as it will stain!

Another way is using evaporated milk, red food dye and a drop or two of black ink... it will stain, but it's edible and has the right thickness.

It kind of funny, but in the old westerns, the blood actually WAS chocolate.

Chocolate syrup was also used for blood in the famous shower scene in Hitchcock's "Psycho."
