I am looking into getting a dove pan an was wondering what the difference is between single and double load are.

Just as it states...one is a one load, and the other has two loads (meaning you can produce two seperate loads, at different times, from the same pan, as compared to one load)....the double load pan is most of the time larger than the single load pan, and can also have a few more things (with imagination) done with it.
